I adore Perlman, though I admit that I haven't really heard enough of his recordings to elaborate on it. You're absolutely right about differing opinions in music...it's nice to see someone who also understands this! Personally, Heifetz is not to my taste but it's wonderful to have varying ideas floating around on the blog.
